Willowglen Semillon Sauvignon Blanc

A dry winter followed by a warm spring and summer enabled vines to produce a healthy crop of fruit. A dry harvest period ensured no disease and optimum ripening conditions.

Tasting Note

Pale green hue. Tropical aromas, lemon/lime citrus, guava, grassy undertones, with a soft palate and crisp acidity.

Winemaking

Picked in the cool of the night the Semillon is pressed gently and quickly clarified to allow us to produce very clean juice ready to ferment as soon as it hits the stainless steel, removing any chance of flavour robbing oxidation. The poor Sauvignon Blanc gets treated a little rougher. The flavour dense skins of Sauvy need to be worked a little harder to relieve them of their deliciousness. A firmer squeeze and lack of a pressing cut make for a wine which is bountiful in flavour. The ferments are continuously monitored to ensure a clean healthy ferment.
