Matured in Port and Sherry casks before being finished in Frogmore Creek red wine barrels seasoned with Jean-Pascal’s fruit mince pie jus, this innovative release delivers an unmistakably festive flavour profile. Expect rich Christmas pudding character, warming spices, sweet caramel and luscious fruit notes, creating a memorable whisky for special occasions, festive gatherings and premium gifting.

A Unique Tasmanian Collaboration

The Christmas Cask tradition began with an inventive idea: giving surplus fruit mince pie ingredients a second life by using the jus to season red wine barrels. Those barrels are then used to finish LARK single malt whisky, creating a distinctive expression that celebrates local craftsmanship, creativity and the spirit of Christmas. 

Tasting Notes

• Nose: Plum pudding, brandy butter, mulled-wine spices and hints of gingerbread.

• Palate: Buttery coconut shortbread and baked custard, developing into spiced apple and rich caramel sauce.
